May Wine & Cheese Pairings
Midnight Moon
Midnight Moon is made by the American company Cypress Grove based in California. Aged six months or more, this pale, ivory cheese is firm, dense and smooth with the slight graininess of a long-aged cheese. The flavor is nutty and brown-buttery, with prominent caramel notes. The cheese is aged pasteurized 100% goat milk.
For a beautiful wine pairing at our café, try our Raymond Cabernet Sauvignon.
Valdeón
Bold and spicy. Valdeón is a rich and creamy, full-flavored cow and goat’s milk blue cheese made in the Valdeon Valley in the northwest area of the Castilla-Leon region of Spain. The Valdeón wheels are wrapped in Sycamore leaves which contribute to their distinctive appearance and complex flavor.
Pairs well with a sweet dessert wine. We recommend to pair this cheese with our Dr. Loosen Riesling from Germany.
Gorgonzola Dolce Organico
Made in Italy, the gourmet Gorgonzola Dolce is the ‘sweeter’ gorgonzola. Mild and soft, it is made using pasteurized cow’s milk and is aged for 3 months. It is very creamy and almost spreadable in texture with a light piquancy.
Great for a summer day, pair the Gorgonzola Dolce with our La Marca Prosecco from Italy

Farm-to-Table Dinner Series

Brick House Kitchen (bhk kafé) is hosting the second Farm-to-Table Dinner Series on May 18th and 19th. The seven course meal will highlight food straight from the Fayetteville Farmer’s Market and other NWA Farms.
As with each of our Farm-to-Table Dinner Series, Chef David Lewis finds his inspiration for each course from what is in season and available in NWA the week of the dinner series.
It’s all about what Chef David Lewis can create anew from that week’s bounty. The beauty of our community comes through as Chef David Lewis carefully communicates who grew the food to the guests sitting at the community style table. Also, provided with each course is the option for Wine or Beer pairings by Zac Henderson and Chef David Lewis. The pair works together to not only introduce great wine and beer to guests, but also to find the perfect match to enhance the local flavors in each course.
Tickets are $75 each for the 7 course meal with the options for $35 wine pairing and $25 beer pairing. Since we work so closely with local farmer’s for the dinner series, reservations must be made by the end-of-day on Wednesday, May 16th. Please let us know of any food allergies or if you would prefer the vegetarian option.

BHK On The Square
The news is out and it is spreading fast! Many of you have either seen the signs on the square or read the great article written by the Fayetteville Flyer, and the rumors are true…we are expanding to the square! A little history lesson for any of you wondering why the window signs say “brick house kitchen,” the name Brick House Kitchen is what our business opened as on South School and where the initials BHK originate from at our cafe on Dickson Street. Our plan is for our spot on the square to be our main home for our primary food service, lunches, wine and cheese, catered special events, and our Farm-to-Table Dinner Series. The immediate plan is to start with the model now at the café, and then expand our business from there. We are super excited to visually be able to make the connection of our mission for our customers. For example, during the Farmers Market we will be able to point outside and say, “that’s who grew the greens on your salad and the farmer next to him/her raised the chickens.” The quality of our food and the use of local ingredients have always been a priority for our establishment, we hope that now this mission will be able to grow even stronger while continuing to educate our guests on local food. We also plan to be become more involved with community events!
With our location on Dickson Street we plan to at least stay open through the end of our lease. At that point, we will go from there.

FARM-TO-TABLE DINNER SERIES: BE A LOCAVORE
7-Course Dinner Series in Celebration of Local Food & Community at Brick House Kitchen
On April 20th & 21st at 6:30pm, brick house kitchen, inc., (operating as bhk kafé on Dickson St.) will host the first Farm-to-Table Dinner Series of the season at their Kitchen at 1079 South School Avenue, Fayetteville, AR. For the Farm-to-Table Dinner Series, Chef David Lewis prepares a 7-course dinner with foods from the brick house kitchen garden, Fayetteville Farmer’s Market, and other NWA farms. In the spirit of celebrating the community, guests are seated family style around large tables.
Education and communication are a major part of the dinner series. At each course Chef David Lewis explains to the guests the origin and the production technique of the food. Dishes are inspired by international flavor sets and cooking techniques, but feature locally produced ingredients such as locally grown herbs and vegetables, locally pastured meats, and locally prepared grains. Each course is paired with a specific wine or beer. The Farm-to-Table Dinner Series is designed to give guests a deeper appreciation for the local food production system, as well as build a stronger sense of community by illuminating the connections among those whose hands are in the soil, those whose hands are holding the cooking tools and those whose hands are on the knives and forks at the dining table.
The courses for the Farm-to-Table Dinner Series are created the week of the event and fully depend on what is currently in season in NWA. Tickets are $75 each with optional Wine Pairings at $35 each and Beer Pairings at $25 each. Due to the dependence on local food, tickets must be purchased in advance either in person at bhk kafé on Dickson St or by calling (479) 442-3805. The ticket price will go up to $100 each (not including wine or beer pairings) on April 16th. Vegetarian option is available.

As a community, we come together for our Farm to Table Dinner Series in the joy we all share, food. Please join us as we celebrate the collection of local friends, farmers, chefs and sommeliers. This dinner series is also in appreciation and celebration of our roots in the Ozarks. At brick house kitchen (bhk), we run on the process of local, seasonal food. Through this system, we rely on our bounty from local farms, the farmers market and our own urban farmstead garden to provide our seven course dinner that Chef David Lewis plans and prepares the week of the dinner series. Because we focus on local and seasonal food, we do not provide a menu. We invite you for this special occasion to our kitchen and home on South School to sit at our community style seating as part of our family. Our hope is that our NWA community grows stronger through the connections made between our guests. Also, that each guest walks away with an even deeper love for our local farmers and food providers. In the true style of Farm to Table, we will all share in the same experience of eating food locally grown and prepared.
Nothing is a true celebration without wine or beer. When you purchase your ticket you also have the option for wine or beer pairings with each course. Our sommelier on staff, Michael Pagana, finds a collection of wine/beer to pair with each of the seven courses. As like all of our bhk kafé on-the-table community events (wine pairing, cooking demonstrations, etc), we love to educate. Not only will Michael explain the pairing of each course in detail, but Chef David Lewis will also address each table with information on the inspiration for the course and where the food was grown in the NWA community.
The Farm to Table Dinner Series at brick house kitchen is built on the relationships we share with our planet through food and the relationships we share as part of the same community. We invite you to take part in an event that is unlike any other in NWA. We focus on the experience we will all share together just as much as the enjoyment of well prepared fresh local food. Our vision is to dig deeper into our community so that we can all educate each other on how truly blessed we are to live in the Ozarks. We strive to do our part through sharing and educating on food grown right here in NWA.

DIY Pallet Menu Boards

Reclaimed, Refurbished, Recycled
You may have noticed we have had a lot of work going on at our Café the past couple of weeks, we have been working with refurbished pallets! From around NWA we have claimed pallets that were or needed to be discarded for various reasons. These pallets are being turned into patio furniture and new indoor signage for our menu signs. We love the reclaimed, refurbished, weathered wood look. One of the best parts of this new decor is that bhk has employed people in our community to get this project done. We thought we would share our DIY process for the new menu boards. Perhaps you can turn this idea into a to-do list board to place in your kitchen for your family, or make frames with words of encouragement for your children’s bedroom, whatever the reason…we hope you enjoy this post.
The first step is to find pallets. You can always check at your local hardware stores, really any place that receives large amount of freight. Our favorite pallet (because of the great look from the weathered wood) that we found actually came from a neighbors yard. There’s just no telling where you’ll find these things.
Step two, you need to pull the pallets apart…carefully. The trick is to get a hammer and crowbar. Place the tip of the crowbar where one of the top boards meet one of the middle support boards. You’ll see the nails holding it together. By hammering the crowbar, wedge the tip of the crowbar between the boards and pull the crowbar. This is going to take some work.
Step three, once the pallet is torn apart, find your way to the hardware store and then Hobby Lobby. You will need four things: 1. A thin piece of plywood that has a soft surface, 2. Chalkboard Spray Paint or Chalkboard Paint, 3. Gorilla Wood Glue. Remember, at the hardware store have the employees cut your plywood to the size you want. At Hobby Lobby purchase number 4.”Chalk Markers” for the clean liquid look of paint pens, but it comes right off with water.
Step four, spray paint or paint the plywood. Let it dry.
Step five, cut your pallet wood pieces to fit together as a frame. Once spray paint is dry, wood glue pallet pieces to plywood. Let it dry with weight on top.
Step six, you are ready to use your Chalk Markets or regular chalk!
Step seven, hammer your boards into the wall. We had to use screws with ours (but ours are big).

Sustainable, Refurbished and Less Waste
So you may have noticed we have a lot of changes going on at bhk kafé and more fun stuff coming soon. This week we have updated some of our menus and put in a Pour-Over system for making coffee. The Pour-Over is a back to basics method of brewing that takes about 2 minutes start to finish. So it basically takes the same time as an espresso drink for a freshly brewed coffee. While we wholeheartedly recommend this method we decided we will continue to brew one pot of coffee, usually dark roast, for those of you in a hurry, or do not want to wait the extra time. The process is simple, you pick from the selection of single origin coffee’s we have available.
Currently we have five different options including Organic Sumatra, Papua New Guinea Pea-berry, and Colombian Supremo. We then weigh out the correct amount of beans in grams and grind them fresh. The ground beans are then primed with a small amount of water to absorb and bloom, then the coffee is brewed using 202 degree water for the perfect extraction.
It is actually a very simple process but very exact and the result is a truly smooth cup of coffee with great flavor. So far people have been shocked at the difference, even those who claimed they wouldn’t be able to tell. The price is the same so come in and try it out! Celebrate Local Food, Farms and Gardens
Fayetteville, AR – The Dig In! Food and Farming Festival is right around the corner! On March 2nd and 3rd our community joins together to celebrate local food, farms and gardens through films, classes, seed-swap, tastings and more. “Dig In! gives us all a place to learn from others, find out where to get more local foods, be inspired by films showing local food movements all over the country,” says Charity Lewis, Farmer at Chicken Moon Farm and co-organizer of Dig In!
We here at bhk kafé are so excited that we get to be apart of this wonderful festival by catering the opening Supporter Appreciation Reception at the Town Center. This tasting by David Lewis is all about local and seasonal food. We want all of you to be part of the Dig In! Festival this year, so we are helping spread the word.
One of the components of the 2012 Dig In! Food and Farming Festival is the documentary films selected to inspire and uplift the NWA community. Queen of the Sun, one of the documentary films chosen this year is a profound, alternative look at the global bee crisis. Dig In! Food and Farming Festival will also host a beekeeping class on Saturday, March 3rd at 2:30 at the Global Campus: Beginner Backyard Beekeeping with Nao Ueda
Another documentary film, Seed Swap in the Ozarks, was shot right here in our backyard. Seed Swap follows Dr. Campbell, an anthropologist living in the Ozarks, as he helps to organize a seed swap to be held March 1st 2008 in Mountain View, Arkansas. Over a period of four years we watch as that first Seed Swap in 2008 sprouts seven new Swaps by 2010.
However, documentary films is only the beginning. The Dig In! 2012 schedule is full of classes to help you learn more about cooking, gardening, and more. On Saturday, March 3rd at 2:30 at Global Campus, Chef David Lewis, our chef at bhk kafé, will be hosting a class, “Cooking in Season.” For more information on classes and activities happening through the Dig In! We are changing how we do cheese to the European Style, and it is amazing! We bought a scale. Now you can come in and order per ounce whatever cheese you want and however much cheese you want. (Don’t fret, we have recommended amounts.) We will make your cheese plate to order. Us changing the way we provide cheese to all of you allows us to give a much more personalized experience.This is a great new way to try artisan cheeses that you never had before without needing to drop major cash by purchasing a large amount. For in house purchases the cheese accompaniments will be provided, just as before. The only thing that is changing is that you have more control. Us keeping the cheese in the wheel until it is purchased and sliced is also much better for the cheese. It keeps the cheese fresh and maintains the high artisan quality better as well. Our philosophy at bhk is to not only provide high quality food, but also we strive to be a sustainable and eco-friendly establishment. Us making the cheese plates and to-go requests per order will significantly cut back on the amount of plastic used. We are so excited about this shift in how we do business with with our wonderful customers.
If you still haven’t tried our artisan European and American style cheeses, this Saturday is your chance! On Saturday, February 25th at 2pm, Michael Pagana will be leading Cheese 101. During this community event our guests will learn about productions, style, aging and tasting. Tickets are $12 in advance and $15 the day of. Beer and wine is encouraged (always)! Mardi Gras is fast approaching! We here in Fayetteville, AR have our own celebration, a family friendly Mardi Gras parade set to start near the square at 2:30pm and finish its last stretch down Dickson St. At bhk kafé we are planning our own celebration in conjunction with the parade! Our friends are in the parade and we want to cheer our friends and our community on as they march through downtown in Mardi Gras style. What’s a parade without an amazing crowd? To celebrate, we will be offering Abita Amber at $2.50 ALL Day! Most of you have seen our porch and know that we have the perfect view of Dickson St. We think the view will be even better with a $2.50 Abita Amber in your hand. Yes, we will have music.
